Yogurt Panna Cotta with Mixed Berries Compote: A Delightful Dessert in a Cup

Hello, dessert lovers! Today, we're crafting a treat that marries the silky elegance of yogurt panna cotta with the vibrant burst of mixed berries compote. Join me as we create this indulgent Yogurt Panna Cotta with Mixed Berries Compote – perfect for satisfying your sweet cravings in style!

Let's kick things off with the ingredients. Here's what you'll need.

For the Yogurt Panna Cotta:

  • 360ml Full Cream Milk
  • 80g Caster Sugar
  • 2 & 1/2 tsp gelatin powder
  • 360ml Greek Yogurt
  • 1tsp Vanilla Bean essence

For the Mixed Berries Compote:

  • 2 cup fresh berries (separate into 2 cups)
  • 3TBSP caster sugar
  • 1/4 TBSP vinegar OR 1/2 TBSP lemon Juice
  • For Garnish (Edible flowers, Mint, Meringue Cookies)

Method:

  1. Let's start with the Yogurt Panna Cotta. In a Saucepan, pour in 360ml full cream milk, add on 80g caster sugar and 1tsp vanilla extract OR vanilla pod (remove its seed).
  2. Heat up the mixture on the stove using low heat. Make sure to heat up, hot to touch but not boil as you do not want to burn the mixture.
  3. In a separate bowl, bloom the 2 and 1/2 tsp gelatin powder by combining it with 2TBSP cold water. Let it sit for a few minutes until it becomes soft and spongy.
  4. Once gelatin bloomed, mix into the milk mixture and stir until the gelatin desolved. Using a sieve in order to sieve out the coarse items out.
  5. Add in the 360ml Greek yogurt into the mixture. Mix it thoroughly.
  6. Pour in the yogurt panna cotta mixture into serving glass/champagne glass,  leaving some space at the top for the berries compote.
  7. Using tooth pick or skewer to remove any air bubble.
  8. Using kitchen towel to clean the edge of the glass for any splashes.
  9. Refrigerate for at least 4 hours or overnight until panna cotta is set completely.

  11. While the panna cotta sets, let's whip up the Mixed Berries Compote. In a saucepan, combine 1 cup mixed berries, 3 TBSP sugar, and 1/4 TBSP vinegar or 1/2 TBSP lemon juice.
  12. Cook the berries over medium heat until they release their juices and the mixture thickens slightly. 
  13. Add on another 1 cup fresh berries. Mix and stir it. 
  14. Once bubbling, remove from heat and let it cool in a bowl.
  15. Once the panna cotta is set, spoon the luscious Mixed Berries Compote on top.
  16. Garnish with some fresh berries, mint leaves and edible flowers.
  17. Alternatively, serve the panna cotta with some meringue cookies at the side.
