Love Shaped Macarons

First, it was the macaron making craze, now my macaron mania to try different shape is gaining more and more momentum. Once you master the basic of making macarons, indeed you may start to play around with different shapes, flavour & decorations.

This is my first attempt to make macarons into different shape. Instead of classic round macarons, I made them into love shaped. Few of my friends were surprised, and asked me how am I doing it (i.e do you use any love shape macarons mold or so on?). My answer to them is sorry nope, I do not even draw any love shapes on my baking paper beforehand. Sometimes, free hand piping is easier to manage. Again, practice makes perfect and I believe everyone can do it as well.

To your surprise, I did see the special round macarons mold selling in Australia here. Too bad, I did not buy any.

See one my love shaped macarons has half heart gone after a bite. Crispy outside, chewy inside and all melted into your mouth of every single bites.

Rapberries Avocado Macarons

When the red meets green, they always look extremely vivid colour in a whole package, as well as reminds me any festive or celebration. Well, it should be Easter Day since it's around the corner.

Macarons, wonder why the craziness came back again recently. Strongly believe that must be both of my office's Irish girl and Canadian guy who always influence me to bake macarons for them. For them, there's the best dessert in Ireland and Canada, or perhaps it's the western culture. Anyhow, when you see how they enjoying the macaron, you will understand the proper way to enjoy each of the bite of these little sweet "burgers".

French Pistachio Macarons (With Passion Fruits cream)

There's quite some time since my last baked macarons, in fact macarons are not my liking as they are overly sweet. High sugar adrenaline made me too sick sometimes. Even so, most of my friends are macaron fans (super duper). They like to eat them as part of their high tea and serve with a cup of English tea. And I always ask them why do you all like macaron so much? The answer always be the same which is they are sweet, crispy texture of the puffs and the thick cream between them add a rich harmony to this delicate pastry, the best combination with tea.

If they can receive this little cute dome-like pastry as a gift, they will be extremely delightful. For me, if you know how painful (failed several times before) to do these macarons and its ingredients, I doubt they will still like it as much. :)

Creme Brûlée Cupcakes

Creme Brûlée is my favourite dessert. This sinful trinity cream dessert consisting of a rich custard base topped with a contrasting layer of hard caramel. The ingredients of Creme Brûlée normally consists of plenty of egg yolks which contributed high cholesterol. Due to this reason, I tried to avoid making this sinful dessert as possible.

To ease my cravings, I improvise and made this Creme Brûlée looked Cupcakes. Its yellowish colour with brownish top reminded me Creme Brûlée, that's why I named it as Creme Brûlée Cupcakes. In fact, they are just normal vanilla butter cupcakes. Trim the edges off, put on some cream cheese toppings and fresh fruits, as yummy as Creme Brûlée.

{Edible Sugar Flower} Orange Daisy

This sugar flower is the easiest to make especially when you have the daisy flower cookie cutters on hand. These daisy flowers can come with various colour that you're aim for, they are perfect for for cake decorating too. I learned how to do this a couple of weeks ago, and I was intimidated before I went, but it is quite simple and so I wanted to share.

Avocado Ogura Cakes with fresh Passion Fruits

Yesterday was St Patrick's day. Thinking to bake something on natural green colour on top of my cake. Seeing that there is still some avocado left in my fridge, hence making them into my natural green colour for my Japanese Ogura Cakes' topping. Despite the green colour, I tried to find some new taste to blend with avacado and decided to use my gigantic fresh passion fruits. Surprisingly, sourish passion fruits match perfectly with avocado cheese cream. The bites of soft texture Ogura cake that blend together with Avocado passion fruits cream cheese....Argh....that's taste of heaven indeed!

Volcano Lava Cupcakes

One of my colleague has asked me on my baking experience on any lava cupcakes. My first thought was lava - something melting when you bite the cupcakes. Wondering how can this kind of feeling accommodate into the cupcakes, just like the Hokkaido cupcakes - I only inserted the cream after the cake part is baked and cooled.

For my new invention of these Volcano lava cupcakes, brainstorming on how the lava fluid looks like. During grocery shopping every time, I was intrigued to buy these fresh custard around frozen department. My first impression was that these custard is made of egg yolk which contributed high cholesterol if over consumption. In fact, I only know the real ingredients after my husband told me during his visit end of last year. Surprisingly, it is made of fresh milk, corn syrup and stabliser - there is no egg yolk at all!!

Cut into half - there you go, lava fluid out.

Not too sweet like most desserts are, and just the right amount of chocolatey-ness in this cupcake. Not just any normal custard which made from egg yolk, this Australian brand fresh custard oozing runny custard goodness (hence the names lava cake).

Raspberries Hokkaido Cupcakes

I've been away for 1 weeks plus to learn from master chef. Gladly received few emails from Hankerie's fans, questioning why there are no updates recently. Thanks all and I shall post my learning experiences with Master Chef  next few days. Now, back to normal routine - fun in baking

This is my new creation after getting such a good response of my Japanese Hokkaido Cake. Thanks to all my Singapore friends who providing me the candid feedback since end of last year. Since it was raspberries season in Australia these few months, I've bought quite a few punnets to invent few different bakes. Indeed, this is the best combination of it. Since fresh raspberries are quite sour naturally, I've added it into this Hokkaido Cupcakes which brings a little bit sweeter. At first, I'm worry to bake the fresh raspberries since they're so fragile. Once you touch it, it breaks easily. Wonder how it turns out after baked, surprisingly it turns out great after baked - just like blueberries! Juicy but still taste sour.
