I created this recipe, especially for my son - fussy eater, and this is his favourite dish all the time. This recipe also will be part of my upcoming lunch box series for kids too.

1 & half pieces chicken tenderloins

1 cup panko bread crumbs + 1/2 tsp Sweet Paprika powder

2 tsp wholemeal self-raising flour + 1 tsp corn starch 

1 egg, beaten with 1/2 tsp Mayonnaise

1/2 tsp Okonomi Sauce

1/2  tsp minced garlic

A dash Nutmeg powder

1/4 tsp  Cumin powder

1/4 tsp  Mild Curry Powder

Half stalk spring onion (chopped)

1/2 tsp Honey Miso to taste

Few Dash Sesame Oil

Olive oil for frying



1 杯 panko 面包屑 + 1/2 茶匙甜辣椒粉

1. Prepare the Chicken tenderloin : Season the chicken into thin slices. Season the chicken with okonomi sauce, minced garlic, nutmeg powder, cumin powder, curry powder spring onion, honey miso and sesame oil. Ensure each piece is evenly coated.

2. Set Up a Breading Station:

- In one bowl, mix the 2tsp wholemeal self-raising flour and 1 tsp corn flour (ratio 2:1) .

- In another bowl, beat the eggs with 1/2 tsp mayonnaise.

- In a third bowl, spread out the panko bread crumbs and mix in 1/2 tsp sweet paprika powder.

3. Coat the Chicken:

- Dredge each chicken tenderloin in the flour, shaking off any excess.

- Dip the floured chicken into the beaten eggs, ensuring it is well-coated.

- Roll the chicken in the panko bread crumbs, pressing gently to adhere the crumbs to the surface.

4. Heat the Oil:  In fryer pan or a large, deep skillet, heat olive oil to 350°F (180°C).

6. Fry the Chicken: Carefully place a few chicken pieces into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown and cooked through, about 3-4 minutes per side.

7. Drain and Serve:

- Transfer the fried chicken to a plate lined with paper towels to drain any excess oil.

- Serve these delightful  complex spiced bite-sized chicken tenderloins as a tasty appetizer or snack.
