Bake Cupcakes for Charity Event

Vividly recalled my first baking for charity in August last year in Miri (previous blog Angry Bird Fever). In fact, I really miss those children in orphanage, really hope that I still able to bake these special stuffs for them but it's too far beyond. Anyway, I hope to continue this spirit in Brisbane here. In Australia, It's so hard to find orphanage or children home. Most of the families here will have this kind of foster relationship to adopt these orphans. With that, it's indeed a good thing that every orphans can receive the best care during their grown up process.

Over a lunch one day, just so happen to found out from one of my colleague on this charity event which will be only held once in a quarter for homeless families on 26th February 2012. At first, I have no idea how it's work or so on and she just asked me to bake more cupcakes for that actual day. Trying my best to bake the maximum for carrying over there purposes - decided to make 30 cupcakes.

Since I've been learning by myself on sugar flower, this is the best time to put into practice too. Spent half on my Saturday just to do around 30 flowers for the cupcakes decoration. For the cupcakes part, I've self-invented the fresh raspberries yogurt cupcakes to make the whole combination a little bit sweet & sour. Finishing them with mix chocolate cream, it really blends quite well. All my cupcakes finished within half an hour, there is one old man loves my cupcakes so much, he kept eating (at least 3 that I know off) whenever asking other people to enjoy it too.

{Edible Sugar Flower} Wild Orchid

In my edible sugar flower series, this wild orchid is my 2nd piece of work. It's indeed tough as I'm using freehand to cut off the shape, without any proper flower veiners and cutter in hand. Colouring with the food colours to represent the wild orchid.

Baby Shower Cupcakes - Part II

Follow on from Hankerie's first Baby Shower theme Cupcakes part I, here comes the part II. These are my lovely handmade fondant cupcakes from doing my own fondant icing, colouring, modelling until decorating. Spent my whole night to finish all these.

All my efforts are worth it as my client is just so touched and love it so much when she first saw it. Sometimes,  the facial expression means everything :)

    Baby Shower Cupcakes - Part I

    This is Hankerie's first Baby Shower theme Cupcakes order in Brisbane here. There are 2 different batches; part I is representing the white roses swirl with mini baby shower topping while part 2 is purely fondant designed cupcakes. The ideas came freely on top of my head, without any drawing or sketches done beforehand this round.

    The baby sex is unknown yet, hence I decided to use the generic colour - light yellow to be part of my cupcake theme colour. Some closeup design as below:

      Hello Kitty Cupcakes

      Hello Kitty is never super straightforward about her presence. She’s always kind of peeking around a corner. She’s a lurker. Even in my baked cupcakes. Vividly recalled the orphans in Miri love this so much especially girls. Wonder how are they now.

      By using freehand to roll this fondant Hello Kitty Face without any Hello Kitty's cookie cutter, roll some white prepared fondant out to a 1/8 inch thickness. Roll the fondant into round shape as Hello Kitty head shapes and make 2 little ears on top of it. Use black frosting in a pastry bag to pipe on Hello Kitty's eyes and whiskers. Add yellow colour fondant as her nose and make her bow over her right ear.

      {Valentine's heart} Heart-shaped Swiss Roll

      Happy Valentine's day!!! Love is in the air everywhere now but I am having a Long-Distance Valentine's Day today. Hence, I made these valentine's heart for myself, sounds sad huh! In fact, these heart-shaped swiss roll made me feel better in a way. It's the toughest swiss roll I ever made, which is much more difficult than those of my usual drawing swiss roll. To make it into heart shape with free hand, imagine that I am not using any heart shape mold or so on.

      To invent something new, I'm using remaining pure fresh raspberries, blend into puree to make the swiss roll cake part, whipped some fresh cream and wrap with some fresh strawberries. Here you go, the complete fresh mix berries swiss roll with heart-shaped! Totally, all are natural colours.

        {Valentine's dessert} Bavarois cheese cake with fresh raspberries

        Thinking of what to bake or prepare for tomorrow valentine dessert? This great new treat blends well with the theme, the red represented by the fresh raspberries. It is one of my favourite desserts and also quite calorie-friendly. This version combines two of the best desserts on Earth: Cheesecake and Bavarois.

        For those who do not know what is bavarois, basically bavarian cream or Crème bavaroise is a classic dessert, a Swiss invention according to the French. Bavarian cream is similar to thickened crème pâtissière but thickened with gelatin instead and flavoured with liqueur. With this, I've added some rum wine to enhance its taste. After that, it is lightened with whipped cream when on the edge of setting up, before being molded.

        When Bavarois meeting up with cheesecake, the combination of taste is just so perfect. The cheese cake part forms of a topping made with soft, fresh cheese upon a base made from my favourite Oreo buscuits and finishing the top part with fresh fruits. Indeed taste like heaven!

        Take closer look from the side. Your partner will be surprised with these little desserts after the great dinner tomorrow.

        Heart-shaped French Financier cake

        Financier cake is a small French cake. It is a light, moist teacake, similar to sponge cake, and contains almond flour, crushed or ground almonds, or almond flavoring. The basis of the cake itself is beurre noisette (brown butter), egg whites, icing sugar and flour. Financiers are often baked in shaped molds. The name “financier” is said to derive from the traditional rectangular mold, which resembles a bar of gold. Another theory says that the cake became popular in the financial district of Paris surrounding La Bourse du Commerce (the former name of the Paris stock exchange).

        The friand pastry, which has become popular in Australia appears to have been based on the French financier; however, Australian's friands typically have additional flavorings such as coconut, chocolate, fruit, and nuts. Australian friands are baked in oval shapes. For this coming valentine's day, I've baked these French Financier cake into heart-shaped.

        {Valentine Special} Edible Sugar Roses

        Believe it or not? These are the real edible roses which is not only for decorating the cakes on this Valentine but also for any wedding/birthday cake. I have spent few hours to just finish these adorable roses (1 hour per rose with full concentration.). This is my special mission for one of my Hankerie's fan. She is using these flowers to decorate her cake for her mum's birthday. How sweet is she!

        Undeniably, roses are always the main character of Valentine's Day especially the Red one! This is the wonderful idea for decorating your Valentine's cake. These fondant roses harden up and are less fragile than royal icing flowers. They do take a little bit longer than icing roses, but the end result is wonderful.   This first time may take longer. Once you get a hold of it, you will be making these roses a bunch at a time.  They are worth it. Not to mention they do last longer.

        Hankerie's handmade edible FAT red roses, which is my husband's favourite. He thinks that this fat rose looks much cuter than the thinner one.

        {Be my Valentine} Heart-shaped Strawberry Mousse Cake

        This is Hankerie's 2nd time to become one of the judge of this month challenge with theme "Be My Valentine recipe challenge" on For this coming Valentine's Day, there are many ways to express your love to your loved ones, and cooking is definitively one of them!

        "Love is in the air" - Valentine's Day is on February 14th, but you have almost all month (until February 27th) to participate in the Be My Valentine challenge. To make it more of a challenge, the judges added an extra rule: your dish needs to include something Red, the color of Love!

        Along with all these judges below, we will choose the best 3 to win the prizes in the end of this challenge.

          French Meringue

          These little cute white things are called Meringue - a type of dessert. They are associated with Swiss and French cuisine, made from whipped egg whites and sugar. Yes, just the egg white and sugar, as simple as that. In Australia, the uncooked meringue produces a pavlova, which is a national dish here. You can actually find ready-made pavlova in every Australia supermarket here.

          With the simplest ingredients, the key to the formation of a good meringue is the formation of stiff peaks formed by egg white. If you've mastered French Macarons, this is even simpler than that - lesser steps to do and easier to do it successfully. In terms of taste, they are light, airy chewy and soft with a crisp exterior. The most important fact is meringue just a high source of protein, sugar as well :)
