Baked Rugby Mooncake (aka Kluang Mooncake)


What is Kluang Mooncake? It is an invention from one of baker in Yuen Fatt 源發餅家 which located at Kluang. They are the originator and inventor of this rugby shaped mooncake. Apparently this Kluang mooncake are freshly baked everyday, and also sold out everyday.

Both of my mother and brother love to eat this type of mooncake but I never try before even I stay at Johor last time. When my mum tried to buy some for us this year (end of August), but unfortunately all of the mooncakes are fully ordered and the next available slot is middle of September which is too close to mid autumn festival. Indeed unbelievable good business.

Hence, I would like to give it a try to bake this mooncake this year despite solving my parents and my brother's craving. From my mum's feedback on this Kluang mooncake, the pastry is very similiar to our baked pineapple tart pastry. With that comment, I tried to bake this mooncake with my  mum's pineapple tart recipe and shape it into rugby shape.



The tips and tricks here are do not over-mix your pastry mixture, else it will be more crumbly than usual pastry. Next tip is to shape your filling to a little bit longish, which you may start from round shape first and then shape it longer. Wonder how Yuen Fatt 源發 baker can shape everything (includes the filling) with round first, and then only shape everything into rugby shape. 

If you've tried Yuen Fatt 源發 Kluang mooncake before, you may notice there are few of the holes on top of their mooncakes. Their comment to that is to represent number of salted egg yolks in it, means that if there is one hole there = 1 salted egg yolk in it, more holes represent more egg yolks there. In my opinion, these holes also having another special benefit, it will prevent the pastry from cracking when baking as those hot air will circulate better through the holes.

In terms of the pattern, it's quite simple to do. You do not need any fancy tools to do this, just use the fork will do. 


This is my first trial in baking this rugby mooncake (aka Kluang mooncake). My both parents and brother verdicts on this mooncake are delicious, buttery fragrance and too good to be true! One improvement that I need to improvise my recipe to a little bit more chewy on the pastry, in order to avoid the over-crumbs. My husband's feedback on this Kluang mooncake is not too impress with the look, perhaps not too use to it.
