  • 26g caster sugar

  • 1/2 tsp Vanilla Essence

  • 63g caster sugar

  • 47g flour

  • Whisk eggs and caster sugar until light and creamy.
  • Gently fold sieved flour into the mixture, then add oil and vanilla essence.

  • Bake for 10-12 minutes until golden brown and springy to touch.
  • While baking, prepare a cooling tray with sugared greaseproof paper.
