Kiwifruit Bread Tart


What will you do with leftover bread? Throw away? No way!! I've transformed these plain leftover bread to something else, it calls as Kiwifruit bread tart. In fact, I always think that it is so tedious to make own tart shell from scratch especially they are buttery sweet in the taste. It will taste even sweeter if you match with custard as the filling.

With bread as the crusty tart shell, fresh kiwifruits and custard as feeling. The whole combination of this taste gave me the whole new experiences. This experiments does not come easy, I've tried few times of trial and error, from the thoughts on how to make the perfect shape until the crusty taste. By using the easiest way, flatten them and roll into muffin pan or tart tin, making them into tart shape. Of course, bake them in the oven first prior putting any fillings.

In terms of bread tart taste, you may opt for different type of bread. I've tried both plain and wholemeal breads, they all turned out perfectly fine with my method below. The tips here is eat them fresh from oven. If you would like to keep for few more days, you can store them in fridge and reheat them before serving.

This is my easiest tart recipes ever, I've just spent 20 minutes from preparing until baking. Bake this together with your kids, let their creativity flows to make different kind of shape as long as the bread tart can hold the fillings

Ingredients
6 plain white bread
1 Zespri® Green Kiwifruit (Cut into slices)
125g whip cream
62.5g milk
44g caster sugar
1 egg yolk
1 small egg

Method
1. Preheat oven to 190ºC.
2. Roll and flatten plain white bread (you can substitute them to wheat  loaf)
3. Tuck in the flatten white bread into greased tart tin (or you can use muffin pan).
4. Bake for 10 minutes until crusty.
5. While waiting, prepare the custard. Mix well with whip cream, milk, sugar, egg yolk and egg.
6. Once the bread tart crust is ready, pour the custard mixture into bread tart. 
7. Put some kiwi at the middle of custard.
8. Send into oven again to bake for 20 minutes until custard is set and golden.
9. You may add on some fresh slices of kiwi during the serving.
