Fresh Pandan Snowskin Mooncake


Pandan leaves - Pandanus amaryllifolius (aka vanilla leaves in UK) is a tropical plant in the Pandanus genus, which is widely used in Asean countries. In Malaysia, you can commonly find these leaves which includes in my home garden.

Pandan leaf is long, thin, narrow, and green. It is sold fresh, frozen, or dried. I still vividly remember I saw only frozen pandan leaves in Australia. The dried leaves are less fragrant than the fresh leaves. The leaves have to be bruised or boiled in order to release their flavor. The leaves have a roselike, almondy, and milky sweet, vanilla-like flavor.

Even Pandan leaves can be found easily in Malaysia, but a lot of bakeries outside or cake shop still using the artificial pandan extract and colouring for making all cakes and mooncakes. For me, I prefer to use the fresh pandan leaves for making all pastries, although the colour appears to be pale naturally. Today I make fresh pandan Snowkin mooncake!



Below is my Snowskin Mooncake recipe:
Ingredients
75g glutinous rice flour
90g powdered sugar
33g Crisco shortening
75g pandan water (100g water cooked with 5 stalks pandan leaves)
Red bean paste and white lotus paste

Method
  1. Wash fresh pandan and boil it in water until fragrance is out. Set aside.
  2. Sieve flour and powdered sugar together in a mixing bowl.
  3. Add shortening and mix them untill you get crumb like texture.
  4. Add pandan water, colouring, mix well until it forms a smooth dough.
  5. Make the fillings into ball shapes each 120g.
  6. Divide dough into small portion each 50g
  7. Flatten dough to wrap up the fillings
  8. Seal up dough to enclose filling completely
  9. Shape it in the mooncake mold.
  10. Refrigerate it minimum 3-4 hours before consume.

                    Hankerie Designer Koi Fish Snowskin Mooncake


                    Snowskin mooncake always is my mum's favourite. This year, I have created these koi fish snowskin mooncake for her. A little, delectable and colourful koi fish mooncake appears to capture a lot of people's attention. In fact, it tooks plenty of my time just to craft one, requires to take note every single details of the koi fish.


                    A lot of people placed the koi fish order this year after I've posted in Facebook. Take a closer look for the following. Aren't they cute?


                    Below is my Snowskin Mooncake recipe:
                    Ingredients
                    75g glutinous rice flour
                    90g powdered sugar
                    33g Crisco shortening
                    75g cold drinking water
                    Colorings of you choice
                    Red bean paste (Your own choice, you may use pandan flavour lotus paste or white lotus paste)
                    Decoration: Red Bean for eyes

                    Method

                    1. Sieve flour and powdered sugar together in a mixing bowl.
                    2. Add shortening and mix them untill you get crumb like texture.
                    3. Add water, colouring, mix well until it forms a smooth dough.
                    4. Make the fillings into ball shapes each 30g (inclusive of yolk if you using one)
                    5. Divide dough into small portion each 25g
                    6. Flatten dough to wrap up the fillings
                    7. Seal up dough to enclose filling completely
                    8. Shape it into koi fish look and decorate the eyes with red bean.
                    9. Refrigerate it minimum 3-4 hours before consume.

                                      Hankerie Designer Bunny Mooncake


                                      Bunny is always the animal who represent in Mid-Autumn Mooncake festival. Hence, I'm making them into my snowskin mooncake shape. This is my continuous post from Hankerie Designer Animal Mooncake 2 days ago. See my previous post here.

                                      Bunny as well as called "Jade Rabbit" has a legend behind it.

                                      One day, 3 immortals creatures who were living in heaven came to the earth. They asked a fox, a monkey and a rabbit to find some food for them respectively. The fox and the monkey both found something for the three immortals while the rabbit got nothing. The rabbit felt very sorry for the three immortals. Finally, he jumped into the fire and said to the three immortals, "Eat me, please!" The three immortal were deeply touched by the rabbit. They decided to give the rabbit the title of "Jade Rabbit" and let him accompany Chang'er in the Moon Palace.



                                      Since it called as "Jade rabbit", perhaps I will do a green colour rabbit tomorrow then.

                                                        Hankerie Designer Animal Mooncake


                                                        Another year goes by, mid-autumn festival again. This year, I'm making "out of tradition" mooncake whereby no Chinese or tradition pattern on top of the round flat mooncake. What encourages me to try out in creating these new inventions is "why mooncake much be look like this?" Cant they be cute? More kids- friendly? as I am still vividly recalled that I seldom eat mooncake when I was kid, always think that mooncake is not for kids in my opinion due to its appearance. Hence, I started this idea, named them Hankerie's designer snowskin mooncake, with the theme of cutie animals. They are absolutely adorable and fun to see before tasting them.

                                                        Likewise making my designer cake, normally I will draw my "blueprint design" on the paper. I applied the same usual practice to sketch the design and make the mooncake into the reality. I always focus on the creativity and originality, and indeed all these creations are fully my copyright including the recipes.


                                                        Apart from the unique appearance, the overall taste of the mooncake are equally important especially its fragrance and level of sweetness. Among all the mooncake paste, I am still prefer the white lotus paste even though the preparation of the whole process consuming plenty of time but it is really worth it. In terms of homemade mooncake, the drawback is the shelf life maybe maximum 5-7 days as they are totally free of preservative. No artificial colouring as well. All the colours from this mooncake are from natural food sources.
