Angry Pigs Swiss Roll

After the long break, it's time to catch up with my blog. There are some time since my last baked swiss roll - Lazy fat cat Swiss roll that gotten pretty good response on that. Everybody just love it, from look to taste. Since my last conducted baking class, there are some students to request me to conduct another class on teaching the swiss roll. How hope that I am still at Miri now!

Learnt the lesson from previous swiss roll, I've omitted the chocolate chips inside the whip cream. In fact, it tastes much better and original, the combination of tastes are just perfect.

Colourful Fruity Cupcakes

My easiest and healthiest cupcakes for my breakfast. Believe it or not, I'm eating a cupcake a day every morning. Those colleagues are so surprised, said "isn't it cupcake serve during afternoon tea break or dessert after dinner?, "Sugar-high!", "Why do you still not put on weight by eating those daily??" Indeed burst my laughter.

Anyway, cupcake is my favourite. Thinking to bake those healthier, less-sugar and fluffier cupcakes for my daily consumption. Today's menu is fruity cupcakes.

Homemade Pancakes

A pancake is a circular, flat and slightly sweet pastry item which often cover with maple syrup before eating. Pancakes are most commonly eaten at breakfast, though they can be eaten anytime of the day. I love my pancakes to be thick and fluffy instead of thin and silky like French crepes.

The origin of pancakes can be traced back to the 17th century Dutch settlers. Pancakes come in numerous variations, mainly depending on the region in which they are made. For instance, in France, Brazil and Canada, pancakes are referred to as crepes and are made using flour, eggs and milk and then served with some savory or sweet filling. Pancakes in the Netherlands are larger in diameter and are served with fillings such as cheese, sliced apples, ham and bacon. Pancakes may also be prepared with a variety of ingredients including blueberries, cinnamon and chocolate chip to produce variations that are rich in flavour.

Classic Tiramisu - Sweet Treat for CNY

Chinese New Year is around the corner. Thinking to make some special dessert for the family reunion dinner - tiramisu. A classic Italian cake made with mascarpone cheese and lady fingers. This is a layered dessert which could be compared to an English Trifle.

This classic tiramisu is always the dessert that I would like to try out. It looks complicated but in fact it's much easier if compared to making a cheese cake. For Malaysian, I guess you all know most of the tiramisu is alcohol-free (means halal) that selling in Malaysia. For me, I would prefer classic tiramisu whereby combining 2 different types of alcohol - Rum and Marsala into this dessert. Blessed that it's so convenient to look for tiramisu's ingredients here, fresh and cheap.

Love this brand of mascarpone cheese. It is a fresh, very rich cow’s milk cheese; double or triple cream (60% to 75% milk fat). Its texture resembles a sticky pudding and it is the color of cream. Alternatively, you may substitute for Mascarpone Cheese with combining 16 oz. softened cream cheese, ½ cup heavy whipping cream and 5 Tbsp. sour cream; mix thoroughly until smooth and creamy.

Dare to be different. I guess you never see this kind of cupcakes before, well this is the real blueberry Cupcakes. This idea came from one of my purchased mold in Australia here - gift set silicon mold. Originally my idea is to use this gift set mold for my mini cheese cake, now making my normal breakfast cupcakes for the first try of this new mold.

Hankerie's Hawaiian Pizza - Made in OZ

In year 2011, I was focus too much on cakes. In the beginning of this year, I've taken on the new challenge to bake Pizza - first time in my life. That's my husband favorite too especially Hawaiian Pizza, he can eat almost 2 big 10-inch (25.5cm) pizza in one go. Gosh!

In Australia, not only all kind of cheeses can be found here easily but also the price is way cheaper than Malaysia. Approximately 600g of mozarella cheese only costs around AUD5 with additional 20% discount sometimes. Such a good deal. In fact, pizza is quite easy to make.

Below is my recipe and method to share with all my fans here, you also can do it yourself at home. I am sure that your family will definitely impress and ask for more variety next time. You may put whatever favourite toppings, all depends on your choice. Undeniably, it will be much nicer than buying from outside.

New Year Eve's Feast with special dessert - Fresh Mango Pudding

Happy New Year 2012!! Hope everyone is having the great celebration past few days ago.

Looking back, I would like to blog about my New Year eve's simple dinner with my husband and friends (Nicole's family) in Brisbane here. Indeed it's a splendid night, having dinner with the whole Brisbane city sea view, toast with Australian wine while enjoying fireworks during the countdown afterwards. Nicole, her husband & baby Lucas are our first guests to our Brisbane home :)

The menu of the night:

Starter: Bruschetta
Main Course: Seafood Chili Spaghetti
Desserts: Mango Pudding & Japanese Ogura Cake

My husband has spent almost 3 hours to prepare all these. He is the main chief for main course while I'm preparing the starter & desserts. Luckily, I've baked this Japanese Ogura cake the day before, else 3 hours will not be sufficient. For 4 adults food, it's easier to prepare. The most headache one is the dinner for baby Lucas. My husband was scratching his head, what food that Lucas can or likes to eat! In the end, he cooked the Japanese garlic fried rice with some shredded chicken breast for him. Thank God, Lucas likes to eat and he ate all by himself without his parents feeding him.
