I'm indeed in cloud nine and designed for him - his favorite Japanese cheese cake with fresh mango mousse toppings, surrounded it with Oreo cookies & decorate it ribbon. At least, I baked this for ourselves for this Christmas even though i'm quite tired after baking all those Christmas bakes orders in past few days ago.

This bake is my continuous creation from my previous Japanese Cotton Soft Cheese Cake with Strawberry Jam (Paris). Enjoy a slice and cheers.



Angry Birds Seasons: Angry Birds Christmas Cupcakes



6 of these adorable Angry Birds Christmas Cupcakes are specially baked for Lisa Wan's nieces & nephew who are great fans of Angry Birds. She is really doted them so much, and bringing these all the way from Brisbane to Sydney today.

Looking forward to see the photo of them eating these exclusive cupcakes soon. I do hope they will enjoy my masterpiece :)  Look at the Angry Pig who dressed up as Reindeer, it looks like wearing the pink skirt as well.



Forever Friends Xmas Swiss Roll



Forever Friends!! I guess most of the girls will know it for sure. I'm a bit surprised some of the Australians do not know what's Forever Friends. Anyway, this is my first time to make Forever Friends icing figure. It took me about 2 hours to finish the whole bear, indeed quite challenging especially making its facial expression. Thank God  when I first shown to my friends, they do recognized "It's Forever Friends" (not just the normal teddy bear).

Specially dedicated this swiss roll to Anthea & her family who will pay her a visit to Brisbane tomorrow for this Xmas.

"Oh no, few more days to Christmas"!! In Australia, Christmas & New Year are really big celebration over here. Believe it or not, there is a Christmas Parade happening every night here.

Christmas Cake Pops: Holiday cheers on a Stick



1 more week to go for Christmas. It's only matters of time now to prepare all the Christmas bakes. Cake pops — crumbled cake and frosting creamed together, chilled, then dipped into colorful candy melt and decorated. They are the fantastic idea for the Christmas party as people love that they don't have to make a huge commitment. Just a few bites and you've satisfied your urge for something sweet in the party. In terms of the preparation effort, cake pops indeed consume plenty of time.

In the Christmas party, you may expect cutesy pops shaped like a Santa hat to be this season's must-have treats.

Angry Birds Xmas Log Cake (Bûche de Noël)



"Ho! Ho! Ho!! Merry Christmas", Angry Green Pig Santa Claus wishes all the Angry Birds & including yourself! If you know me well, I will definitely design Angry Birds Cake for each of the unique season. For this Xmas, I've spent 2 days to design, bake, made Angry Birds icing figures, assemble & decorate this Angry Birds Xmas Log Cake. It is called Bûche de Noël in French, one of many traditional cakes baked at Christmas which origins from France. The name of this recipe literally translates as "Christmas log," referring to the traditional Yule log burned centuries past. The ingedients suggest the cake is most likely a 19th century creation. That's when thinly rolled sponge cakes filled with cream and covered with chocolate icing. 

This Angry Birds Xmas Log Cake is baked for an exclusive order of Xmas Barbecue party at Brisbane (Australia) yesterday. There are 2 kids and more adults like Angry Birds crazily! The most classic moment was the Baby Lucas's expression when seeing the Angry Birds cake for the first time. It was exactly the same expressions with the Miri's orphans and the kids in the long house that I visited last time. Too bad, it only happened for a short while, not enough time to capture the video!

There are tons of feeding programs all over the world. In Australia alone, there is Children’s Charity, Ruiru Feeding Programme, and Samaritan’s Purse, which all allow you to donate food to the underprivileged.  Children’s Charity can help you coordinate your own event, choosing to offer a snack either during or after school hours.

This is Hankerie's another first time - honorably become one of the judge of this month "White Xmas Challenge" in verygoodrecipes.com. This year December indeed a busy month for me - hosting "Aspiring Bakes #14 Creative Xmas bakes, judge of "White Xmas Challenge" & bake for festive orders. Anyway, my inspiration and creativeness never stop me from baking even I fell sick for past 1 week. 

To kick start this White Xmas Challenge, every judge needs to prepare very own recipe for this "White Xmas Challenge" and publish it on 5th December 2011. Before reveal my own bakes, here is the summary of this White Xmas challenge about - extracted from the challenge page in verygoodrecipes.com

Theme
This month theme is: White Christmas. 

There is always a magic feel in the air when snow is falling on Chritmas Eve. Not everyone lives in a region where snow is usual during winter, but everyone can try to recreate this magic in the kitchen!

What dish do you think of when you hear "White Christmas"? You can of course cook with white ingredients such as white fish, white chocolate, white asparagus, white truffles, white vegetables, chicken, cream, coconut milk etc. But your recipe does not have to be all white! It needs to be festive and have a "snowy" feel. You can be creative and imagine a snowy presentation, for instance sprinkling snow crystals (drops of cream, petals of white edible flowers, and a lot of other ingredients) or trying to create a snow-covered landscape one can eat!

Have a jolly holly Christmas with Hankerie this month!! Thanks to SSB for giving me the chance to host this month Aspiring Bakers challenge. This month theme is similiar to last year Xmas theme, the only difference is the creativity of your Xmas bakes. Of course, we do hope more submission coming this year too. It is NOT burger! It's cupcake.



Believe it or not, they are not burgers. They are cupcake burgers!!! My inspirations came from my cupcakes excess for baking too many cupcakes in one go. They are my combo cupcakes from all of my previous cupcake posts titled "Butter-less Avocado Chocolate Cupcakes", "Mix Berries Juice Cupcakes with fresh berries" (Omit the berries) & "Black Forest Cupcakes" (I just take its cherries). These burger cupcakes taste are just awesome and perfect, combined all the gist of these cupcakes.

The funniest thing was when I brought this to office to eat these as my breakfast, my colleagues asked me "why are you eating burgers as breakfast???". Burst laughter when they found out all these are sweet cupcakes.

Assemble wise, half the vanilla cupcakes (without any berries) into half, cut a slice of the butter-less chocolate cupcakes, and then dressing with avocado cream, strawberry jam & cream, few slices of fresh cherries, at last close it with the other half of vanilla cupcakes. Topping with sesame. Burger cupcakes completed !



Fresh Apricot Cupcakes - Insect Series



This is first ever experience in my life to eat the fresh Apricot. The texture is so similiar to the peaches, it's much smaller and crunchier, of course more expensive too. Taste, it's unique but not too sweet. Perfect for baking which matching sweeter cupcake base. Since November is apricot's season in Australia here, I bought some fresh apricots and experience baking them for the first time. The result are pretty good when matching with blueberries in the cake :) Enjoy my creativity inspiration to decorate these lovely healthy cupcakes.

Butterfly Cupcakes

Fresh Australian Mango Cupcakes


It's nearly the end of the Cupcakes month. Today's menu is the fresh Australian Mango Cupcakes. By using the fresh mango blend with gelatin, sugar as well as fresh cream, it's perfectly set on top of the moist mango yogurt cupcakes. For me, I am still prefer the Philippines mango rather than Australian Mango, it is much sweeter and softer. The good thing to bake yourself is you definitely know all these are free of any colouring, preservative or artificial mango puree. 

Cherry Chocolate Cupcakes


I love cupcakes so much especially chocolate cupcakes. When fresh cherries meet with chocolate cupcakes, the fantastic taste just like heaven. 


I love the way how I assemble this cupcake. How did this idea coming from? The reason is that I want to put more fresh cherries in between the chocolate cupcakes layer. That's how you can taste every single bites with the cherries and cupcakes together.

Grapes Cupcakes with Flower Arrangement


These wonderful seedless grapes are the best combination with the strawberry cream frosting on these vanilla cupcakes. All the natural fruits sweetness spring the gist of original flavour cupcakes. For presentation wise, these grapes are decorated as flower petal while putting the chocolate chips in the middle of flowers to join all the petals together.

Devil's food Cupcakes with Avocado Lemon Glaze



It caught me a surprise today! My Butter-less Avocado Chocolate Cupcakes has been featured in one of the Cupcake.blog.com which based in US (for those that appreciate the art of the cupcake), see my feature  here. This website basically feature those unique and creative cupcakes; You may find some wonderful ideas there too.

With that, i'm posting the similiar cupcakes today but these cupcakes are not the chocolate cupcakes which bake with cocoa powder only, it consists of the melted chocolate inside. These devilishly dark goodness chocolate cupcakes match perfectly with the sourish pure avocado cream. The natural green colour combine with the red colour cupcakes liners make the perfect bakes idea for this coming Xmas.  The taste, the look & the presentation will impress your guest for sure.



Wedding Cupcakes Tower Designed by Hankerie



Wedding bell rings for Barry & Izzy soon. All of us in the project team in Australia decided to give them the surprise wedding party celebration for them before their flyback to Malaysia tomorrow. Everybody are bringing some snack/food for the surprise party (High-tea) today. For me, I decided to bake the exclusively design wedding cupcakes for them.

Well, this has been my best meaningful cupcakes as they are for the wedding couple. By using the white & pink colour as my cupcakes theme, came out slightly different design for each of them to build up the wedding cupcakes tower. The pink colour swirl represents the pink roses for the wedding. Glad that everybody are enjoying these 12 cupcakes and finished it with thumbs up :). Some of them are extremely surprised that all these cupcakes are baked by me, they called it "Expensive SAP Consultant Cupcakes". What a joke! Couple of them taking the cupcakes tower photo as they claimed really looks too nice. Some even say they all done so professionally, even looks much better than those sell outside. Oh...really made my day!!



Fresh Nectarine Yogurt Cupcakes



What is Nectarine? From my first sight, I am confused by its look, it looks like red apple from far, sometimes looks like plum but it is a type of peach. The most interesting facts about this unique fruit is that they come from the same family as the rose and are also related to the almond!!! Its smooth skin is red in colour on a yellow to pale yellow background whilst the flesh is yellow to almost red. Each of this nectarine has a pointed, furrowed, egg-shaped seed in the middle. 

In Australia, nectarine's season is from September until April whereby January and February are the peak season. The prime growing areas are located at New South Wales and lower part of Queensland. Now I understand why I can get the cheaper price of these nectarine in Brisbane here.

Butter-less Avocado Chocolate Cupcakes



Everyone scare of FAT!!! Cupcake, no way (it's full of butter). Do not worry now, this GOOD-Fat avocado cupcake absolutely match your diet plan then. It contains mostly the monounsaturated kind, is extremely good for the heart according to the medical research. How I've invented this is just substitute the butter into fresh mashed avocado in this cake recipe. Undeniably the texture of the cake is not as fine as the butter-contains cupcake. Think about it, it's good for your health and say it all later.

This classic and elegant cupcake reminds me of my childhood. Black Forest Cake was our family splurge dessert whenever celebrating our birthday. They weren't much choices for the birthday cakes in the past, and the black forest is the most delicious and affordable price among others. Naturally, my siblings and I always hope that faster reaching either one of our birthday soon, just to get and eat this Black Forest Birthday cakes.

Even as getting older, this is still one of favorites-although, I’m not quite sure if it’s more the cake or the nostalgic effect when I have it. Today, I make it into small little cupcakes, perfect for few bites and yet not enough to just have one.

Mix Berries Juice Cupcakes with fresh berries



It's summer at Australia now. Whether you’re looking for strawberries, blueberries, raspberries or boysenberries, all the fruits are becoming readily available and at affordable prices (some even half price in supermarket now). This mixed berries juice cupcake is versatile and a great use of any type of berry or soft and juicy fruit. With the wonderful fresh mixed berries juice as well, I've invented these juice cupcakes in order to get tastier and stronger berries-fragrance. The only disappointment again is the colour, it becomes a bit greenish after mixed with batter, no pink or red colour at all for the cake.

Anyhow, this recipe is simple and perfect for those afraid of baking. You mix a batter and pour it into a cupcake pan, then drop handfuls of berries on top after baked. Bake and eat. Seriously, it’s that simple and the taste? Out of this world delicious, natural & fresh. It’s that good.

I miss my Angry Birds!!! By using the remaining cakes, made it into Angry Birds cake pop!!! The best ever gift for kids especially during their birthday party!

Australian Cherries & Blueberries Cupcakes


In the past one week, I've missed the baking so much!!! Finally, I baked these first batch of cupcakes in Australia after sorting out all the house moving.

During my grocery shopping yesterday, I bought some fresh cherries and blueberries, which are the product of Australia. It's the season now!! Hence, gladly bought them back and started to bake my cupcakes! At first, I was wondering just bake blueberries cupcakes only but it's too common. And I believe, the taste will be much better if I add on some of the juicy sweet cherries. My instinct is right, the combination is just perfect. Another important point here is, I prefer some crust on top of my cupcakes and I came out the idea of this specially made topping :)

Halloween Pumpkin Cake Pops


"Hello from Brisbane!" I've reached at Australia safe & sound yesterday. Thanks to my fans & friends for asking me. Hankerie will be established in Brisbane soon :) so looking forward.

Today is my last Halloween post - Cake Pops. For sure some of you must be wondering are they lollipop or cake? Yes, they are the both combination. Cake pops are basically little smushed balls of cake and frosting (kind of like when you used to smash your leftover cake all in pieces, maybe with some cream/frosting, and eat it as goop). You bake up a cake, let it cool, tear it into fine crumbs, stir in something to hold it all together, and roll it in balls. As easy as that! They're terribly cute, and they're also a great way to use for any party or event. Also, I've used up my leftover fondant icing for the decoration. Alternatively, you may melted some chocolate and coat the cake pop.

Traditional Kueh: Steam Chocolate Egg Cake



Steam Egg Cake or as I used to call them in Hokkien "Kueh Nerng Kor" was one of my favourite childhood snacks if compare to the "Huat Kueh (Prosperity Cake)". I remembered being extremely happy whenever there was a festival. Sometimes my mum steamed these Steamed Egg Cake as prayer offerings. I would only aiming the airy and soft egg cake after praying.

Angry Birds Seasons: Angry Birds Halloween


Halloween is around the corner - on this coming Sunday!! For this great festival, I've prepared the specially designed Halloween Angry Birds celebration cake.

By using the black, white and orange color, it represents my Halloween theme for sure. The black represents the dark & stormy night but all these wont stop the Angry Birds to kill the Pigs. If you're one of the Angry Birds fans just like me, then for sure you've played this Angry Birds Halloween series before. They are 30 levels filled with pumpkin patches, exploding jack-o-lanterns, and creepy skeletons, lit by a full moon and eerie lantern light. All these has been demonstrated on my cake except the creepy skeleton due to my cake's space limitation.

Words are so difficult to express my feelings right now, I'm really miss all my Mirian friends here as they always being here with me in these 3 and half years, be it working, friends outside works or even baking together lately. The most touching part is the card, full of the words from the bottom of their heart for me; I actually feel like crying after reading those. All these wonderful time will be remembered vividly from time to time, it's always my best farewell gift - Memories. I've been went through several farewells dinners/lunches in these 2 week, my feeling start to get stronger day by day.

Today I would like to blog about this as besides having farewell dinner, and I also received these 3 lovely cookbooks from Nurliza, Malati, Daphne, Gary, Diana & Jen (of course with my favourite Angry Birds wrappers too). These cookbooks will be contributed greatly into my Hankerie, definitely I will try these recipes and blog about it in the future. Thanks to them and hope our friendship continues even though distance apart.

Traditional Kueh: Self-made Apam Sari Ayu Kueh


Well, at first I would like to pass this month's Aspiring Bakers theme - traditional Kueh. After seeing all my baker's friends so hardworking to submit their wonderful entries, it makes me bake too.

In Malaysia, we have different races, hence you can find wide range of different type of traditional kueh. This Apam Sari Ayu Kueh is my most favourite Malay Kueh as it consists of fragrance of pandan leaves smell and coconut milk. I'm pretty sure you cannot resist too. Here is the secret recipe that I obtained from one of my Malay friend, after Malay language translation :-

Japanese Cotton Soft Cheese Cake with Strawberry Jam (Paris)


In the past, cheesecake has never been my favorite, but after I’ve baked Japanese Cheesecake successfully; I’ve totally fallen in love with it! I love it because it’s light and not so cheesy like normal cheesecakes. Best of all, my husband loves it, that's why I've the energy to experimemt to bake until the most cotton soft cheese cake that he will prefer to.

AB Overloaded: Angry Birds Birthday Cupcakes


For those who really likes Angry Birds, I guess you wont find bored to find all these creations. Since Iim blogging on Angry Birds series these 2 weeks, these are my exclusive designed Birthday Cupcakes with wonderful cakes texture underneath the decoration. You must be wondering why there are only 8 cupcakes here; the reason is Zaliha's boy was celebrating his 8 years' old birthday in past 2 weeks ago. Apologized that I only have some time this week to post it in my blog, she has been looking forward about this post for quite some time. According to her, her boy loves Angry Birds so much. I still remember the comments from her after posted my 1st ever Angry Birds Cupcakes for the orphans; that's why I tried to find time to bake for him by hook and by crook.
